Chicken Parmesan 10 points

This was really good 🙂 We had it for dinner last night. I served it with Ronzoni Smart Taste spaghetti 1 serving was 3 points.

Chicken Parmesan

If you don’t have time to make your own sauce, you can use a good jarred sauce in its place.

29 oz canned diced tomatoes, with Italian herbs (2 cans)
1 tsp Italian seasoning
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp black pepper
1 tbsp sugar
1 tbsp balsamic vinegar
1 pound(s) uncooked boneless, skinless chicken breast, four 4-oz pieces
1/2 cup(s) seasoned bread crumbs, Italian
4 tsp olive oil, divided
1 spray(s) cooking spray
3/4 oz shredded part-skim mozzarella cheese
1/4 cup(s) grated Parmesan cheese, fresh

* Combine first 5 ingredients in a large saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 35 minutes. Stir in sugar and vinegar; simmer 5 minutes.

* Preheat oven to 350°.

* Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1⁄2-inch thickness, using a meat mallet or rolling pin. Dredge chicken in breadcrumbs.

* Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add 2 chicken breast halves to pan; cook 3 to 4 minutes on each side or until browned. Repeat procedure with remaining oil and chicken breast halves.

* Arrange chicken in an 11 x 7-inch baking dish coated with cooking spray. Pour tomato mixture evenly over chicken, and sprinkle with cheeses. Cover and bake at 350° for 35 minutes. Let stand 5 minutes. Yield: 4 servings (serving size: 1 chicken breast half, 3⁄4 cup tomato mixture, and 1 ounce cheese mixture).

down down down… Jacki is going down!

So I am an obsessive weigher… I know. Not good. But I am addicted to my scale.

I stepped on it this morning and it said 207.9 🙂 Thats 4 lbs since Monday. I am rocking the WW plan this week!!

A sad day

I dont want to go into the whole story, but I do want to document how I am feeling today.  My husband and I lost a dear friend this week.  We got worried when we hadn’t heard from him and after several worried hours of trying to contact or locate him my husband went to his apartment and a neighbor was able to climb through his bedroom window, where they found him still in his bed, taken away from us at 47.

We will miss him greatly.  He had 4 kids and a circle of family and friends that will miss him so much.  I am sad for us, for his kids, for his wife, and his family.  I can’t stop thinking about it and it hurts.

I know he is in a better place.  He was a good man and went to a good place.  But knowing that doesn’t make it easier.   After all of the stress and worry and grief yesterday I wanted to eat anything I could put my hands on.  I didn’t.  I am still sticking to the diet today too.  It all seems so insignificant though.  There are bigger things in life to worry about than how many calories you are putting in your body.

We want to help in any way we can.  I want to offer our help to his wife, but I am too nervous to call there today.

Oh well, more tomorrow.

Week 1, Day 2

In 2007 I lost about 60 pounds doing WW. I felt great, and I was looking better. In 2008 I gained all of it back. I know WW works, I know I can do this. So here it goes again…

Day 1 212 lbs
Goal 140-145 lbs (depends on how I look ad feel at 145)
